Rum die 6 maanden tot 5 jaar op eigenhouten vaten heeft gerijpt.
Na deze rijpingsperiode, wordt de rum gemengd met een vers Caribisch suikerrietdistillaat, om een delicate smaak te verkrijgen.
De laatste stap is houtskoolfiltering.
Na dit proces blijft er een kristalheldere rum over van uitzonderlijke frisheid met een bijzondere, harmonieuze afdronk.
Baquba Rum blanco is daardoor heerlijk 'on the rocks' te drinken
of te gebruiken als basis voor allerlei coctails en longdrinks.

Proefnotitie
Sterke accenten van sinaasappel, cacao, rozijnen en gekookt
tropisch fruit, een beetje als plumpudding met vla, weelderige
en rijke smaak, met zoete ondertoon van gedroogd fruit, karamel
en honing, de zoetheid wordt gecompenseerd door een bosrijke ruggengraat;
langdurige afwerking met een droge limoenachtig karakter wat doet
denken aan cognac.

This very special rum was distilled from 100% Canne Bleue
before being aged during a minimum of 8 years
in our cellars.
The result of this first time experience is quite impressive
in term of flavours.
When we started this experience 8 years ago, only
a few casks were filled with our white rum Canne Bleue.
As a result, this product is available today in very limited quantities
so we have decided to bottle it in 50cl bottles with details about
casks and bottle numbers.

wordt met veel liefde en vakmanschap gedistilleerd
in de ambachtelijke distilleerderij dan de Familie van Zuidam.
Meer dan 50 jaar ervaring bij het maken van exclusieve gedistilleerderde dranken en een constant zoektocht naar perfectie heeft geleid tot deze bijzondere reeks Rums.
The Flying Dutchman rum is de allereerste rum ooit in Europa
(en dus ook de allereerste rum ooit in Nederland) gedistilleerd.
De rum wordt gedistilleerd uit zuivere rietsuiker melasse.
De fermentatie gebeurd met een speciale gist in kleine batches op een lage temperatuur. Dit draagt bij aan het fruitige karakter van deze rums.
De fermentatie duurt minimaal twee weken. Dit is veel langer dan gebruikelijk maar is essentieel om de delicate smaken te laten vormen.
Na de fermentatie wordt de rum drie keer gedistilleerd in kleine handgemaakte koperen potstills.
Pas na de derde distillatie is de rum precies zoals we hem willen hebben. Dit is een veel ambachtelijker en kleinschaliger wijze van distilleren dan de kolommen distillatie die voor bijna al de andere rums (99%) in de wereld wordt gebruikt.
De rum wordt hierna op kleine houten vaten gerijpt.
Voor de witte rum is dat minimaal 6 maanden
en voor de gelagerde rum is dat minimaal 1 jaar.
